Our Process:
Brewed Coffee
We strive to offer the best cup of coffee in town. To achieve this goal, we begin with our Intelligentsia Direct Trade coffee, grind it fresh and measure each batch meticulously to ensure proper proportion for rich flavor. When then force our triple-filtered hot water through the grinds, producing delicious, gourmet coffee batch after batch.
Pour-Over
Quincy’s Café and Espresso provides individual cup brewing as an option via pour-over for any of the daily coffee offerings. The pour-over process ensures the absolute freshest cup of coffee possible.
We begin with freshly-ground, freshly-roasted whole bean coffee. The coffee is then added to a filtration device and water is poured through the grounds cup by individual cup. The result is a pure, smooth drinking experience that is the freshest around.
Iced Tea
Our fresh-brewed Intelligentsia Classic Iced Tea begins with a malty, loose leaf, Indian black tea accentuated with just a touch of bergamot oil, an essential oil extracted from a Sicilian citrus fruit with a delicate, flowery, lemon flavor. This brisk blend that evokes the flavors of sun tea is a summer delight and the epitome of iced tea: full of character, sweet, crisp, and refreshing.
The tea is then placed in our specialty Chemex pour-over brewer, extracting and infusing the flavors of the leaves with hot water to produce a savory nectar which is then chilled and served for your enjoyment.
French Presses and Tea Presses
For a fresh, full-bodied tea or coffee, there is no better route than one of our personal presses. In fact, when it comes to tea, you won’t find any other option than one of our Bodum presses. This is because we believe so strongly in the superior quality of freshly-steeped loose-leaf tea.
The press process is quite simple. The tea or coffee is mixed directly into the pot with hot water. Once the proper steep time has been reached, a filter is pressed down into the pot, pushing the tea or coffee to the bottom, filtering the infused water and providing you with a decadent beverage full of the tannins and natural oils of the coffee or tea.
Cold-Brewed Iced Coffee
Our gourmet iced coffee is brewed in the most unique of ways. Utilizing our Toddy brewing system, the iced coffee begins and ends cold. The grinds are steeped for a minimum of 12 hours to ensure proper infusion. We then filter it into a bold concentrate ready for dilution to your taste.
The benefits of this process are many. The coffee produced is less bitter, harbors no acidity and all of those background flavors–chocolate, a dark caramelization and even slight smokiness–come through brilliantly.
Hand-Crafted Espresso Drinks
The heart, art and passion of any coffee house is represented in the quality of their hand-crafted espresso bar drinks. Quincy’s has spared no expense in training and equipment to ensure you are receiving a work of art every time you are served a drink from our bar.
Contrary to large coffee chains, we have maintained the traditional approach to creating an espresso drink. This means calibrating a perfect grind, tamping and hand pulling every shot with no compromises on quality.
We maintain the same commitment to quality with our “milked” drinks, carefully steaming our dairy to guarantee perfect aeration, providing rich, creamy milk and foam to finish off our hand-pulled works of art.
